Here at Bay Leaf we are trying to bring you Indian and South Asian cuisine in a new light with a tight focus on Northern and Southern Indian Cuisines whilst paying homage to other cuisines of the region and also the popular “Indo-Chinese” dishes from India. You get all the yummy Asian goodness with Indian zing in one dish.
The cuisine of North India is rich, varied and hearty though subtle mostly in seasonings it packs immense flavors brought out by cooking techniques passed on through generations. Bhunno, tadka, tandoori, dum pukht and long slow simmered to name a few. The predominant spices used in cuisine of this region is cumin, coriander, turmeric, garam masala, ginger, garlic besides exotic spices such as cardamom, cloves, saffron, nutmeg, mace and iris flower essence. The most noteworthy dishes from northern cuisine are curries, kebabs, biryanis, naans, kulchas and darling of all the Chicken Makhani.
In southern India there are even more diverse kind of cuisines such as Udupi, Chettinad, Rayalaseema, Andhra, Hyderabadi, Konkan, Malyali, Syrian Christian to name a few. Here at Bay Leaf we have tried to focus on one the most popular in India, the Udupi style of food, commonly also know as tiffin food in southern India. This style encompasses rice and lentil or just plain rice or lentil batters in various proportions that are then fermented to make delicious foods such as dosai, vada, idli, uthappam, appam, these are served with a lentil and vegetable stew called sambhar along with coconut and other chutneys.
